Raw Sun Dried Tomato Sauce
Pulse in a food processor or blender a half cup each of fresh tomato (seeded) and sun dried tomato, a handful of fresh basil leaves, one garlic clove, chopped, a half shallot, chopped, and a dash or two of salt. Spoon on top of veggies.
Broccoli Currant Salad with Creamy Cashew Dressing
1 cup raw cashews, soaked at least 1- 2 hours
⅓ cup water
1½ Tablespoons apple cider vinegar
1 Tablespoon lemon juice
1 Tablespoon maple syrup
1 Tablespoon shallot, chopped
1 clove garlic, chopped
½ teaspoon sea salt
½ teaspoon dijon mustard
Blend until smooth, then toss the dressing over raw broccoli florets, and add in chopped red onion, pumpkin seeds, and currants.
