Ingredients 1/3 cup rice wine vinegar 1/4 cup canola oil 2 tsp sesame oil 1/4 cup bottled Thai peanut sauce 1 pound napa cabbage, thinly sliced 1 cup shredded carrot 4 scallions, green and white parts thinly sliced 1 whole rotisserie chicken, cooled and shredded 1/2 tsp freshly ground black pepper 2 tsp black sesame seeds 2 scallions, thinly sliced
Preparation 1) Whisk vinegar, oils and peanut sauce in a medium bowl. 2) In a large bowl, combine cabbage, carrot, scallions and chicken. 3) Pour sauce mixture over the salad and toss. 4) Garnish with sesame seeds and scallions. (Serves 6)
