Healthy Snack: Red Beet Hummus

redbeethummus1Dip cucumbers or baked pita chips for a great snack!

(Makes 2 cups, serves 8)
4 oz (1 cup) packaged cooked beets (Love Beets), 1 (10oz) container of prepared hummus, 1 Tablespoon lemon juice

Preparation 1) Add beets to food processor and pulse until chopped. Add hummus, lemon juice and pulse until smooth.

Nutrition data (1/4 cup serving) 72 calories, 4g fat, 0g saturated fat, 0g cholesterol, 159mg sodium, 15g carbohydrate, 2g fiber, 3g protein
