Fit! Live! Win! Healthy Meal: Cheddar & Apple Quesadillas

Are you sick of cereal or eggs? Here is a quick and easy weekday breakfast idea for back-to-school. You can also wrap these in foil and eat on your morning commute!


1 ½ cups shredded sharp cheddar cheese (like Cabot 50% less fat sharp cheddar)

6 whole wheat tortillas (6 inches in diameter)

1 or 2 small apples, cored and thinly sliced

Cooking spray


  1. Sprinkle 2 tablespoons cheese over one half of each tortilla. Arrange apple slices over cheese (barely overlapping) and top each with 2 more tablespoons cheese. Fold in half.
  2. Spray a large non-stick skillet with cooking spray and heat over medium heat. Cook quesadillas in batches, about 2-3 servings per side. Serve warm.
