Healthy Recipe: Slow-Cooker Steel-Cut Oats

Oatmeal is a source of soluble fiber, which can help lower cholesterol as part of a heart-healthy diet. Top with 1/4 cup chopped walnuts for a complete breakfast.

 

Servings: about 6

Serving Size: 3/4 cup

 Ingredients

1 quart almond milk (you can substitute soy or rice milk if you like)

1 cup steel cut oats (also called Irish oatmeal)

7 ounces unsweetened coconut milk (about half a 13.5 ounce can)

1/4 teaspoon salt

1 cup dried cherries

1/2 teaspoon vanilla extract

 Instructions

Combine almond milk and next four ingredients (through cherries) in a slow-cooker. Cover and cook on low for 7 to 8 hours.

Before serving, stir in vanilla extract. Top with 1/4 cup walnuts if desired. Leftovers can be refrigerated and reheated.
