Summer may be on its way out, but fruits and vegetables are always in! Great summer classics–such as peaches, strawberries and plums–are still in season and can be enjoyed in so many ways. Throw them in low fat yogurt or oatmeal to naturally sweeten up breakfast; they even make a great topper for whole-wheat waffles. Put them on a skewer and enjoy your favorite fruits freshly grilled. Grilled fruit can compliment any meal and can add a little something special to your favorite dishes.
You can even try tossing fruit into a salad for added sweetness. Fortunately, the warm weather of summer yields many seasonal fruits and vegetables that are both tasty and nutritious.
Try grilling eggplants, peppers, onion or zucchini. Put them on 100% whole wheat bread for a great tasting sandwich that can be topped with any low fat cheese (Mozzarella works well). Get the kids involved by letting them assemble their own sandwiches!
Looking for a delicious side dish? Try grilling some corn on the cob with a little fresh lime juice, a bit of cilantro, and a drop of butter substitute. The flavors come together to give a new twist on a grilled classic. Grilling vegetables can be a great (tasty) way to increase your daily vegetable consumption and is very kid friendly.
The more colors you can add to your plate, the more nutrient dense your diet will be! Don’t be afraid to try fruits and vegetables in new ways, especially while summertime produce is in its prime! Whether you are grilling your favorites or enjoying them in their raw state, fruits and vegetables are always in season and can be enjoyed any time.
